For acoustic music, or anything that needs a lighter touch, I use LP Congas and Bongos, along with a host of items from the "things-that-make-interesting-noises" family of instruments.
Because I only have one pair of ears, I like to use a roto-tom kit for rehearsal. This gives me the response of "real" drums, but at a lower volume ... which is usually appreciated by everyone else in the room as well.
For years now, I've played to a click, in practice, rehearsal, recording, and performance. I know that not everyone believes in "the power of the click", and I've played some great "click-less" shows, but I really believe that each song has its own perfect tempo. Sometimes it feels great to pound it out 20bpm faster, but pretty much without exception, listening back to a show-tape makes it all too clear that what FEELS great when you're playing doesn't always SOUND great when you're listening.
